Applesauce



12 cups apples; peeled, cored, and chopped into chunks
produce protectant or lemon juice
1 cups sugar (or up to 2 if you want it sweeter, less if you don't)
2 tsp cinnamon
1 cup water

Sprinkle produce protectant or lemon juice on apples as you peel and slice them.  Put ingredients into crockpot or large saucepan.  In crockpot, cook on high for 3-4 hours; in saucepan, cook on medium heat for 35-35 minutes, until apples are tender and can be mashed with a fork.  Put into hot, sterile jars and process in hot water bath.  Makes 2 quarts.

Basic Cheese Sauce

1/4 cup butter
1/8 to 1/4 cup flour
salt and pepper to taste
approx 2-3 cup milk or half & half
approx 2 cups shredded cheese

Melt butter in saucepan. Add flour, salt, and pepper. Stir until mixed together. Cook until bubbly. Slowly whisk in milk or half & half. Cook over medium to medium high heat until just boiling. Reduce heat and simmer 1-2 minutes. Add shredded cheese and stir until all of the cheese is melted and mixed in well. If too thick, add milk until desired consistency.

Suggested uses:
- Simple au gratin veggies: Pour over steamed broccoli and/or cauliflower in baking dish. Bake at 350 for 30-35 minutes.
- Easy Broccoli, cheese, rice casserole: Mix together cooked rice, steamed broocoli, and cheese sauce. Bake at 350 for 35-40 minutes, until bubbly.
- Simple homemade mac-n-cheese: Pour over cooked pasta in baking dish. Top with more shredded cheese. Bake at 350 for 35-40 minutes, or until bubbly and cheese has melted.
- Easy "gourmet" pasta - Use shredded parmesan and mozzerella for the cheese sauce. After cheese is melted, add in about 1/2 to 1/3 cup of your favorite marinara sauce, and some chopped fresh basil. Toss sauce with cooked pasta of your choice and sliced, grilled chicken. Top with parmesan.

Raisin Sauce for Ham

3 cups raisins
3 cups water
1 small can frozen OJ concentrate
6 Tbsp lemon juice
1 cup sugar
4 Tbsp flou
4 Tbsp margerine
1/2 tsp cinnamon
1/4 tsp cloves

Simmer water and raisins for 5 minutes. Add OJ concentrate and lemon juice. Stir sugar and flour into sauce. Add remaining ingredients. Cook and stir until thickened. Serve with baked ham.

Creamy Pesto Sauce

2 Tbsp butter
2 Tbsp flour
1/2 tsp salt
1/8 tsp pepper
1 to 1 1/2 cup milk or half and half
2/3 cup pesto

Melt butter over medium heaet. Add dry ingredients. Heat until bubbly and smooth, stirring constantly. Carefully add milk. Stir constantly while heating to boiling. Boil 1 minute. Remove from heat. Stir in pesto. Serve over pasta or chicken.

Alfredo Sauce

1/4 cup butter
1 cup heavy cream
1 clove garlic, crushed
1 1 2/ cups grated Parmesan
1/4 cup chopped fresh parsley

Melt butter. Add cream and simmer 5 minutes. Then add garlic and cheese. Whisk quickly, heating through. Stir in parsley and serve.

White Sauce

2 Tbsp butter or margerine
2 Tbsp flour
1/4 tsp salt
1/8 tsp pepper
1 cup milk

Melt butter over low heat. Stir in dry ingredients. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.

*To make THICKER = increase butter and flour to 1/4 cup.
*To make THINNER = decrease butter to and flour to 1 Tbsp.

Pesto

good handful of fresh spinach
1 generous tsp basil
1 generous tsp garlic, minced
1/4 cup parmesan cheese
1/4 cup olive oil

Process all ingredients to make a paste.

Red Enchilada Sauce

1 Tbsp olive oil
2 cloves garlic, minced
1 tsp minced onion
1/2 tsp oregano
2 1/2 tsp chili powder
1/2 tsp basil
1/8 tsp pepper
1/8 tsp salt
1/4 tsp cumin
1 tsp parsley
1/4 cup salsa
1 6oz can tomato sauce
1 1/2 cups water

Heat oil in large saucepan over medium heat. Add garlic and saute for 1-2 minutes. Add remaining ingredients and mix well. Bring to a boil, then reduce heat to low and simmer for 15 to 20 minutes.
