French Silk Pie

This recipe is 1 1/2 times the original recipe. I felt like the original recipe wasn't enough for a good pie, but doubling it was way too much.  This seems to be perfect!  My husband's sisters have experimented with adding peppermint extract or peanut butter to the recipe, but I'm a minimalist and love the original just the way it is!

1 1/2 sticks butter, softened
1 cup plus 2 Tbsp sugar
4 1/2 Tbsp Cocoa
3/4 tsp vanilla
3 eggs
1 pre-baked pie crust

Cream butter, sugar, and cocoa together.  Stir in vanilla.  Add eggs - one at a time - beating each egg for 3-5 minutes (a must!)  Pour into pie crusts and chill for 1-2 hours, or until set up. Top with whipped cream and enjoy!

Pie Crust

1 cup flour
3/4 tsp salt
1/4 cup oil
2 1/2 Tbsp cold water

Stir ingredients together, and mold into a ball.  Place dough ball on one sheet of wax paper, press down to flatten it out, and then place another piece of wax paper on top. Roll dough out with a rolling pin.  To pre-bake before adding fillings, poke holes all around dough with a fork, then bake at 400 for 12-15 minutes, or until lightly golden brown.  Makes ONE pie crust.

Shortbread Crust for Cheesecakes

1 1/2 cup flour
1/3 cup sugar
1 lg egg separated, yolk slightly beaten
1/2 cup butter, softened

Mix flour and sugar. Blend yolk and butter with flour mixture. Shape dough into ball. Chill for 10 minutes. Roll out dough to 1/4 inch thick between two pieces of wax paper. Cover bottom of spring-form pan. If a pre-bake is necessary for cheesecake recipe, bake at 400 for 15-20 minutes.

Pecan Pie

3 eggs2/3 cup sugar
1/2 tsp salt
1/3 cup margarine, melted
1 cup corn syrup
1 cup pecan halves
1 pie crust

Beat together eggs, sugar, salt, and corn syrup. Stir in pecans. Pour into pie shell. Bake at 375 for 40-50 minutes.

Graham Cracker Pie Crust

1 1/2 cups crushed graham crackers
2 Tbsp sugar
6 Tbsp butter, melted

Mix all ingredients and press into pie plate.

Quiche of Any Kind

1 pie crust
6-7 eggs
1/2 cup milk
1 cup shredded cheese (any kind), divided
salt & pepper to taste
1/4 cup Parmesan


Fillings:
1 cup chicken, cooked and cubed
1 cup ham, cooked and cubed
1 to 1 1/2 cup pork sausage, browned and drained
bacon bits
1/2 cup cottage cheese
shredded hash browns
broccoli, cut up
yellow and red peppers, cut up
spinach, chopped

Prepare pie crust and put in pie plate. Place fillings into pie plate. Beat eggs. Add milk, 1/2 of cheese, cottage cheese (if using), salt, & pepper. Stir in chopped spinach (if using). Pour on top of fillings. Top with remaining cheese and Parmesan. Bake at 350 for approx. 1 hour, until top is golden brown and until knife inserted in middle comes out clean.

Fresh Pumpkin Pie

1 sugar pumpkin
1 pie crust
2 eggs
1 cup brown sugar
1 Tbsp flour
1/2 tsp salt
2 1/2 tsp pumpkin pie spice
1 12oz can evaporated milk

-Cut pumpkin in half and remove seeds. Place cut side down on cookie sheet, lined with slightly oiled aluminum foil. Bake at 325 for 30-40 minutes, or until the flesh is tender when poked with a fork. Cool until just warm. Scrape pumpkin from flesh. Mash or puree in small batches. Increase oven to 450.
-In a large bowl, slightly beat eggs. Add brown sugar, flour, salt, 2 cups pumpkin, pumpkin pie spice, and evaporated milk. Stir well after each addition. Pour mixture into the unbaked pastry shell. Place a strip of aluminum foil around edges to prevent over browning. Bake at 450 for 10 minutes, then reduce the oven temp to 350. Bake an additional 40-50 minutes, or until a toothpick comes out clean. Remove foil about 20 minutes before pie is done. Cool pie; refrigerate overnight for best flavor.

Pecan Pie

3 eggs
2/3 cup sugar
1/2 tsp salt
1/3 cup margerine, melted
1 cup corn syrup
1 cup pecans, halved
1 pie crust

Beat together eggs, sugar, salt, margerine, and corn syrup. Stir pecans into mixture. Pour into pie crust. Bake at 375 for 40-50 minutes.

Apple Crumb Pie


5 to 6 cups apples, peeled, cored, and sliced
1/2 cup sugar
3/4 tsp cinnamon
1 pie crust
crumb topping

Press crust into pie plate. Pile apples on crust. Mix cinnamon and sugar together; sprinkle over apples. Make crumb topping and sprinkle over apples. Bake at 400 or 35-40 minutes.

Crumb Topping for pies

1/3 cup sugar
3/4 cup flour
6 Tbsp butter

Blend ingredients together with fork. Spoon over pie.

Cherry Pie

1 1/3 cup sugar
1/3 cup flour
2 cans red tart pitted cherries, drained
1/4 tsp almond extract
2 Tbsp margerine
2 pie crusts

Mix sugar and flour together, then toss over drained cherries. Sprinkle almond extract over. Pour into pie crust. Shave margerine over cherries. Put second crust over and press together with a fork. Place 2"-3" strips of foil around crust. Bake at 450 for 30 minutes with foil, then 20 minutes without foil.

*Try a crumb topping instead of a second pie crust*
