Zucchini Casserole

6 cups of zucchini cut up
1/2 cup onion chopped
1 cup shredded carrots
1 cup sour cream
1 can cream of chicken soup
1 pkg chicken stove top stuffing
1 stick melted butter

Boil zucchini, onion, and carrots in a pot of water for 5 minutes. Drain off water. Transfer veggies to bowl and mix in sour cream and chicken soup. In another bowl, mix stuffing and melted butter. In a greased 9x13 put half of the stuffing mixture, followed by all of the zucchini mixture, and topped with the remaining stuffing mixture. Bake at 350 for 30-35 minutes.
