Shortbread Crust for Cheesecakes

1 1/2 cup flour
1/3 cup sugar
1 lg egg separated, yolk slightly beaten
1/2 cup butter, softened

Mix flour and sugar. Blend yolk and butter with flour mixture. Shape dough into ball. Chill for 10 minutes. Roll out dough to 1/4 inch thick between two pieces of wax paper. Cover bottom of spring-form pan. If a pre-bake is necessary for cheesecake recipe, bake at 400 for 15-20 minutes.
