Green Velvet Cupcakes


2 1/2 cups all purpose flour
2 cups sugar
1 Tablespoon cocoa
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 cup oil
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon vanilla
1 oz green food coloring

Mix dry ingredients together.  In separate bowl, whisk together wet ingredients.  Then slowly mix together wet and dry ingredients. Pour batter into greased or lined cupcake or cake pans.  Bake at 350 for about 18-20 minutes for cupcakes, about 30 or so minutes for 9" round cake pan.  Let cool completely and frost with cream cheese icing.
