Shrimp Ceviche

3/4 cup fresh lime juice
1 pound shrimp, cubed
6 roma tomatoes, diced
2-3 large cucumbers, diced
10 baby carrots, chopped fine
1/2 cup fresh cilantro, chopped fine
1 Tbsp ketchup
1 Tbsp habenero pepper sauce
salt and pepper to taste

Put shrimp in lime juice. If shrimp is uncooked, let shrimp set in lime juice until the shrimp becomes opaque (the lime juice "cooks" the shrimp); about 5 minutes. )Though I just used already cooked, deveined shrimp.) Add tomatoes, cucumbers, carrots, and cilantro. Toss until well mixed. Stir in ketchup, hot sauce, salt, and pepper.

Serve with tortilla chips.

*Lobster, conch, fish, or crab may be substituted for or added with the shrimp.
